Drop and Roll Chicken. With Pinenuts and Rosemary.
Yet another winner from MIL that literally takes a half hour to prepare. And because my brain is mush I’m posting it now to remind me to cook it tonight.
2 T red wine vinegar
3 T olive oil
1/4 cup of pine-nuts
1 T chopped Rosemary
Pepper
6 boneless chicken breasts
Heaps of grated parmesan
Drop the top five ingredients into a cuisinart then coat the chicken. Once coated roll in grated parmesan. Bake for 20 min at 375 or until juice runs clear. I just dare you to find an easier recipe.
