Popa Petar's Chicken Soup
Given that I am due with our fourth imp any minute now I’ve spent some time gathering and teeing up guest bloggers to see The Saucy Apron through the chaos. On that note here is my granddads soup recipe. Therapy for me to make and delicious any-day of the week and time of year.
Plenty of chicken bones, a leftover roast chicken or some ham hocks
An onion
A few carrots
A few Celery Sticks
A bay leaf
Tomato
Vermicelli noodles
Load a large pot with all the ingredients and fill with water. If you do not have much chicken or ham use stock instead or part stock, part water. Bring to a boil then simmer for hours. As the soup reduces add salt and pepper to taste. If you are in the mood for a tomato base throw in some diced tomato or a can of tomato (especially good with ham hocks) Continue to simmer. Once the stock is full of flavor cook some vermicelli noodles. Laden soup over noodles. Therapy at its best.
