Peas Bean Me Up. Peas and Beans With Pecorino
We had a fabulous meal at a friends house this week and were treated to this delicious dip inspired by Jamie Oliver. We couldn’t stop eating it. Serve on crostini/brushetta/toast. 1 cup edamame (broad beans would work too)
1 cup peas
Mint
1 cup grated pecorino cheese (parmesan would work too)
Olive oil
Lemon juice
Salt and Pepper
Tear up a handful of mint and mash with beans and peas. Mix in the cheese with a few glugs of olive oil. Add a little lemon juice, salt and pepper. Smear on fancy crunchy toast. Thanks A&A!
