Why Did the Chicken Cross the Road?
To Roast with Potato and Peppers
A one dish wonder. Perfect served on whatever greens you have in the fridge.
Four whole chicken legs or thighs or both
4 potatoes chopped into chunks
2 bell peppers chopped into chunks
An onion or two copped into chunks
A teaspoon of thyme or rosemary
A good splash of olive oil
Salt and pepper
Toss the whole lot together in a roasting dish then roast for half an hour or until juice runs clear from the chicken at 450 degrees. Serve on salad greens. If you like de-glaze the pan with a splash of wine, stock or water and pour juice on top. Done. Yum.
