I'm not Sharing Shepards Pie
Individual Shepherd’s Pies, made in ramekins, are great for dinner parties and a fun meal for the imps. Beyond easy to prepare and perfect with a salad for summer.
A pound of minced meat. I like lamb
A carrot
An onion
2 cloves of garlic
Olive oil
1 tbsp tomato paste
Red wine
1 cup of chicken stock
1 tbsp thyme and or rosemary
Six or so potatoes
Butter
Salt and Pepper
Parmesan cheese
Fry the meat in a splash of olive oil until brown. Grate in carrot, onion and garlic cook until soft. Add tomato paste, a good splash of red wine and herbs. When the wine has reduced, mix in stock. Boil potatoes and mash with milk and butter until creamy. Grate in plenty of parmesan. Add salt and pepper. Pour mince into baking dish or individual ramekins and put potato on top. Sprinkle with cheese. Bake at 375 for 20 minutes or until golden on top.
