Orzo Good Sausage, Tomato and Fennel Stew


Pronounced “keen wa” this smart little grain is quite fabulous. Rich in protein and amino acids it’s known as the mother grain.  I love its nutty texture and use it instead of rice or couscous as a side.   

Here is a basic recipe to get you started.  
1 cup Quinoa
2 cups water
2 tablespoons of lemon juice
1/2 a cup of parmesan cheese.  
Salt and pepper to taste
Fresh mint if you have some handy

Rinse Quinoa WELL
Bring to boil in the water then simmer covered until the water is absorbed.  (The grain uncurls)
Mix in lemon juice, parm and chopped mint.  Season.
