Whats in the Fridge Frittata
Last night I just couldn’t be bothered. I stood at the fridge uninspired. Leeks, leftover chicken soup, lettuce and some smoked salmon. I was contemplating cereal, then I saw the eggs. Suddenly the leeks and salmon made sense. See below for other ideas.
Salt and Pepper
Fry the leeks in some olive oil or butter at medium high until soft. Add salt and pepper to taste. Gently beat the eggs and pour onto leeks. Cook until the sides firm a little. Chop up salmon and place on top with dollops of cream cheese. Broil until set. Serve with greens and toast.
Other combos you might find in the fridge. Just fry the veg, add the egg, cook for a bit then broil with cheese on top.
Onion, broccoli and parmesan.
Bell pepper, scallions, feta.
Spinach, sun-dried tomatoes and cheddar.
Asparagus, onions and gruyere.
