Quick Chick. With Olives and Lemon Zest.
I love this recipe but can’t for the life of me remember where it came from. So consider it stolen until further notice. Good but stolen.
A cup of your favorite olives
6 to 8 chicken pieces. I like thighs
6 garlic cloves
A handful of chopped parsley
2 tablespoons lemon zest
A cup of cherry tomatoes
Salt and Pepper
Olive oil
Toss the chicken in a baking dish, hiding a piece of garlic under each. Mix the olives, parsley, lemon zest, tomatoes, salt, pepper with a good gulping of oil and spoon over the chicken. Bake for 20 minutes at 400 or until the chicken is golden and cooked through. I like to serve over salad greens with the pan juice poured on top.
