Nice and Spicy Zucchini Bread
I had a hankering for zucchini bread this morning but only had half the ingredients for three different recipes. So I took a punt and mashed them altogether. Punt paid off. Spicy but sweet and fulfillingly dense. The imps love it.
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon curry powder
1 teaspoon cinnamon
3/4 cup sugar
1/2 teaspoon vanilla essence
2 large eggs
1/2 cup olive oil
1/2 cup plain Greek yogurt
1 cup coarsely grated zucchini
1/4 cup raisons
Preheat the oven to 325°. Mix flour with baking powder, baking soda,salt, curry and cinnamon. In another bowl, mix the sugar with the eggs, vanilla, oil and yogurt. Add the wet ingredients to the dry ingredients then stir in zucchini and raisons. Scrape the batter into loaf pan lined with baking paper and bake for about 1 hour and 10 minutes, until the loaf is risen and a toothpick inserted in the center comes out clean. Cool before serving.
