Lamb Lollipops
These little treats are stupidly simple to make. So simple you will curse me for bothering but prior to this discovery I was intimidated by the lamb rack. Costco sells good Australian ones cheap, so stock up next time you visit. They freeze well. Once in hand the trick is to cut the rack into chops. Follow the bone with a sharp knife to slice off perfect lamb lollipops. Try to keep them the same thickness.
Salt. Plenty. Grill at medium to high heat for 2-3 minutes a side. Do not over cook. Let them rest a few minutes before serving.
Great with a salad and crusty bread.
