Chocolate Laced Banana Bread
I follow this character online, that calls him/herself banana bread nut. Every day he or she finds, bakes, talks, reviews and tweets about a new kind of banana bread. I’m fascinated. Here’s a chocolatey one.
1 1/2 cups flour 1 tsp baking powder 1/2 tsp baking soda
1/2 tsp salt 1 tsp ground cinnamon 3/4 cup sugar 2 tb melted butter 1 large egg white 1 large egg at room temperature 1 cup banana puree made from 2 very ripe bananas
1/2 cup sour cream 1/2 tsp vanilla extract 1/3 cup chocolate chips
Butter a bread pan and line with a sheet of parchment paper. Preheat oven to 350F. Sift flour, baking powder, baking soda, salt, and cinnamon. Mix in sugar. In another bowl mix butter, egg white, egg, banana puree, sour cream and vanilla. Make a well in the middle of the dry mix, pour in the wet mix and stir until almost mixed. Add chocolate and stir until just mixed. Scrape into pan and bake for 40 minutes, or until the center feels lightly springy. Imagine it with nuts as well!
