Cheap Thrill Veggie Grill.
Burgers, Bangers, Ribs and Steaks all so good on the grill. But don’t forget the vegetables. My favorites are eggplant, Zucchini, Bell peppers and Corn. The smokey flavor is second to none. Perfect with Lamb Lollipops.
Corn
Soak with husks ON in salty water for 15 minutes then peel back the husks and remove the silks. Replace the husks after rubbing corn with butter. Wrap twice in foil and throw on grill for a half hour. Turn every ten. For an added kick flavor the butter with herbs, cumin, garlic or chili flakes.
Zucchini and Eggplant
These are great hot off the grill or made ahead and served cold. Slice both long ways about 1/4 inch thick. Sprinkle with salt and allow to sweat. Dry off and brush with olive oil, salt and pepper. Grill until golden.
Bell Peppers
Love this method for peppers. Cut into 4 pieces removing seeds. Grill until skin is black. Throw in a plastic bag for a few minutes then rinse and peel off the skin. Splash on some olive oil. Squeeze on some lemon. Toss in some salt and pepper. So tasty.
