Easy Peasy Pesto
If there’s one spread that’s a Jack of all trades, it’s pesto. On those nights when I’m lost for inspiration I hedge my bets on pesto, and normally come out on top. Here’s a list of pesto inspired meals.
Tossed with pasta using a little pasta water to make a sauce.
Tossed with shrimp or as a side with any meat.
A big dollop into any soup or on a baked potato.
Tossed in a green salad or a bean salad.
Smeared over toasted baguette with sliced tomato and mozzarella.
As a base sauce for pizza.
2 Packed Cups of Fresh Basil.
1/3 Cup Olive Oil
1/3 Cup Toasted Pine-nuts
A Clove of Garlic
1/4 Cup Parmesan Cheese
Salt and Pepper to your liking.
Put everything but the cheese in the blender and blend till the oil is green. Add the cheese and pulse a few times to mix it in. To keep it for days in the fridge put a thin layer of olive oil on top.
A Swift Kick. Curried Couscous.
Couscous is the queen of simplicity. It takes minutes to cook and mixes well with anything. This recipe adds a curry kick combined with the sweetness of raisons and banana. For texture almonds add the crunch.
2 Cups of Cooked Couscous.
1/2 Cup Yogurt
1/4 Cup Decent Olive Oil
A Teaspoon of White Vinegar
2 Teaspoons of Curry Powder
Salt to Your Liking
1/2 Cup Raisins
1/2 Cup Chopped Banana (use a firmer one)
1/2 Cup Sliced Almonds. (toasted are good)
1/4 Cup Red Onion Chopped tiny
1/4 Cup Fresh Mint Chopped
