I’d never thought to roast asparagus. Silly me. Luckily smart cookie Donna Hay has. If you want to make an entire meal, soft boil some eggs and dip the asparagus into the yolk. mmmmmMMMMMMmmmm.
A bunch of Asparagus
Plenty of Garlic
A good gulping of olive oil
Salt and Pepper
Parmesan Cheese Shavings
Trim the bottoms off the Asparagus and toss in an oven proof dish with sliced garlic and zest of a lemon. Cover and bake at 360 for a half hour. Serve as is or cooled with lemon juice and parmesan as a salad.
