One Fish. Two Fish. Three Fish Pie.
If you haven’t figured it out by now I’m a fish freak. I just love it, but I am picky. Which is why smoked fish is a good fall back and easy to find at the market. There are two elements to this dish, the mashed potato top and the white sauce to mix with the fish. This is the basic recipe. Add what you like to the white sauce. Fried onion, peas, chopped up boiled egg...whatever you fancy.
A smoked fish picked through for bones and broken up
Potato Top
6 potatoes chopped
A tablespoon of butter
1/2 cup milk or cream
Salt and pepper
Boil potatoes till soft then mash well with butter and milk or cream. Add salt and pepper to taste.
White Sauce
A tablespoon of butter
A tablespoon of flour
A cup of milk
Salt and pepper to taste
In a saucepan over medium high, melt the butter. Add the flour and stir, stir, stir. You are making a roux. When the two are combined well, add the milk a little at a time. Stir, stir, stir. Add fish with salt and pepper to taste. Put in an oven proof dish and pour mash on top. Sprinkle on some cheese if you like. Bake at 400 degrees for a half hour or until potato is golden and crispy.
