No Fuss Fish in Foil
I like this because it keeps the peace among picky eaters and is easy to assemble. Individual packages allow you to custom make everyone’s meal with little hassle. Experiment. It won’t kill you. Works best with good sized white fish fillets. I like snapper and flounder. Tear off a decent piece of foil for each fillet. You can make a fancy packet if you’re creatively inclined or just flop the fish in the middle and fold up like a gift once you add the rest.
Salt and pepper (i like white pepper.....)
Sliced tomatoes
Thinly sliced onion
A little fresh basil or other herb that you like
A puddle of really good olive oil
Assemble the packs loosely then cook in a 450 degree oven for 12 minutes. The grill works too. Done fish will be white not translucent on the inside and flaky.
Other ideas:
Crushed garlic with spinach and olive oil.
Soy and ginger with edamame.
Salsa, corn and cumin.
Or simply lemon with salt and pepper.
