Outside the Box Mac and Cheese
I once believed DIY mac n cheese would result in a big fat drama. I couldn’t have been more wrong. And with added bits of steamed cauliflower I’ll go so far as to say it’s healthy. The trick is to master a basic cheese sauce.
A tablespoon of butter
A tablespoon of flour
A cup of milk
A cup of cheddar cheese (or something fancy if you prefer)
Half a box of pasta, cooked (quinoa works too!)
Half a cauliflower, cooked
Salt and pepper to taste
In a saucepan over medium high, melt the butter. Add the flour and stir, stir, stir. You are making a roux. When the two are combined well, add the milk a little at a time. Stir, stir, stir. Add cheese and stir until it melts. If you want a thinner sauce add more milk. Remove from heat to fold in pasta and cauliflower. Cheesy Goodness
