Labour of Love in less than an Hour. Anthony Bourdain's shroom Soup
Search the web and you will find this recipe everywhere. Probably because it’s a five star soup that doesn't take much more skill than a cup-a-soup. Surprisingly rich and flavorful with a wholesome texture, perfect for entertaining or huddled over a bowl with some buttery toast.
An onion sliced thin
12 oz of mushrooms halved. (I used about four cups)
4 cups of chicken stock
A sprig of parsley
1/4 cup of sherry (whiskey or red wine in a pinch)
3/4 stick of butter (you can skip this if you must, use a little olive oil)
Melt a little butter in a soup pot. Cook onion until soft. Throw in the rest of the butter and add the mushrooms. Cook for 8 minutes. Add stock and parsley, bring to the boil, then simmer for an hour. Blend until smooth. Return to the pot adding sherry, salt and pepper. Done.
