Bacon and Egg Pie. Nice.
Great with a salad for dinner but even better cold in a picnic lunch. Bacon and egg are the basics of this pie but you can add peas, corn and or carrots. I like it with onions and tomatoes.
Flakey or Puff Pastry
6 to 8 slices of bacon or ham chopped up
8 eggs
A chopped onion if you like
A chopped tomato if you like
Anything else that you like, chopped.
Salt and pepper.
Line an oven proof dish with pastry. Crack in the eggs letting the yolk crack. Toss in the bacon, onion and tomato. Season with salt and pepper. Put a layer of pastry on top pinching together the edges. Pierce with a knife. Mine usually already has a hole by now so i don’t bother. Bake in a 400 degree oven for 20 mins or until egg sets. So good cold.
