For Zucchini's Sake Fritter it.
Apples, bananas, corn, mussels, clams and of course zucchini make damn fine fritters. Here is a basic recipe of the eggier kind that works well with zucchini. Add feta or ricotta if you want something fancy.
6 zucchini
1 onion well chopped
4 eggs
1/4 cup of flour
salt and pepper
mint and yogurt....if you want a sauce
Grate and salt zucchini, then let it stand in a colander for half an hour. Squeeze extra fluid from the zucchini then mix in onion and eggs. Add flour, salt and pepper and mix. Fry half cup portions in olive oil at medium to high heat until golden on both sides. Blend some mint and yogurt to dollop on top. Breakfast, lunch, dinner or just a snack. You choose.
